Gaggia Classic Pro/Evo Wooden Steam Knob.

The stock knob is the cheapest-feeling thing on the machine, and you touch it every single drink. This one is turned from solid hardwood and varnished. Warm in the hand, and wide enough that the valve opens smoothly instead of in a jerk.

Walnut, olive, or blackened ash, in a plain profile or a striped turning. Natural wood, so grain and color shift from piece to piece.

• Wipe with a damp cloth, no soap. Refresh with wood oil.

Fitting it

Line the flat of the steam valve shaft up with the flat plastic face inside the socket, and the flat metal spring inside the knob with the curved side. Then press on firmly.
